Green Flash Beer Dinner at Dos Perros – 11/18/15

Calling all hop heads!

Calling anyone who wants to get to know the various nuances that different hop-driven beers can display. Charlie Helms from Green Flash Brewery is going to be joining Dos Perros on Wednesday, November 18 and he’s bringing some pretty cool beers.

Was a time when you couldn’t think of doing a Green Flash dinner without the flagship West Coast IPA. Well, we tasted it, and it tasted delicious as always, but there was just so many new and interesting offerings that it didn’t actually make the cut. What did?

Well the Segal Ranch IPA, for starters, which is a very noble and balanced beer where all the hops are grown on the same ranch. The same ranch these guys have been buying their hops from for decades, actually. Cascade, Tomahawk, Amarillo hops make this a great pair for the crispy shrimp and yucca fritters with poblano puree.

There’s also Oculus Sauvage, a special edition version of Le Freak (their most award winning beer), which is normally a Belgian-style IPA but in this case gets a little shot of wild yeast and some time in used red wine barrels. Gonna go great with some rich white fish and ripe guajillo chile and clove sauce.

We had to look no further than our tasty calamari with escabeche confetti to match the easy-going 30th St. Pale Ale, and that should be a great way to start the dinner.

We’re not going to describe the entire menu but it’s going to be a great time and a delicious dinner. One more thing worth mentioning, this will be the first beer dinner that our dear friend Michael Morrone will be doing with us now that he’s returned to the helm. He has an incredible palate and encyclopedic knowledge of food, and it was such a treat to write the menu with him.

Fried calamari with escabeche confetti and salsa verde mayo

Pan-roasted sea bass with guajillo-clove-garlic sauce and potato-plantain hash

Lomo en Pulque (pork loin roasted in beer) with onion-fried bread ragout
-Imperial IPA
